2 Tbsp vegetable oil or butter
1 medium size onion, chopped
1 green pepper, chopped
3 stalks of celery, chopped
3 cloves garlic, finely chopped
1/2 small green chile, chopped
2 large tomatoes
2 bay leaves
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp dried thyme
1/2 tsp dried oregano
1 tsp Worcestershire sauce
3/4 C long grain rice
3 C vegetable broth
salt and pepper, to taste
1) Heat a large pan over medium-high heat and add oil. Once oil is hot add onion, green pepper and celery and cook for 5 minutes, until translucent.
2) Add the garlic, chile, tomatoes, bay leaves, paprika, garlic powder, cayenne, thyme, oregano, salt, pepper and worcestershire sauce. Let it cook about a minute.
3) Add the rice and slowly pour in the broth. Lower the heat and let it cook until the rice absorbs all of the liquid, 20-25 minutes.
