Spicy Sesame Noodles with Crispy Tofu

Ingredients:
Chili Sesame Sauce:

1/2 C Peanut Butter

1/3 C Sesame Oil

1/3 C Soy Sauce

1/4 C Rice Vinegar

2 Tbsp Garlic Chili Paste

2 Tbsp Sugar

1 Clove Minced Garlic

Noodles and Tofu

Rice Noodles

12 oz Extra Firm Tofu (I buy cubed tofu)

Sesame Seeds

Green Onions

Crushed Peanuts
Instructions:

1). Chili Sesame Sauce:  Put all ingredients in food processor/magic bullet, blend until smooth.

2). Tofu: press excess moisture out of tofu. I let it sit on a towel for an hour. Heat a small amount of olive oil/butter in a non-stick pan. Add the tofu and stir fry until brown. Add about 1/2 C of sauce and simmer until the sauce is absorbed into the tofu and it is golden brown.

3). Noodles: Bring a pot of water to a boil and cook rice noodles according to directions. Drain and add to tofu with the remaining sauce. Toss until evenly warmed.

4). Top with green onions, peanuts and sesame seeds.
